Ingredients:
- 10 ounces Diana Marinated Artichoke, quartered
- 1/2 pound Pasta Reggia Capelli
- 1/4 cup Nafsika's Garden Parmesan Style, grated
- 1 garlic clove
- 2 tbsp Solon Extra Virgin Olive Oil
- 1 tsp Kalas Iodized Sea Salt
- 1/2 tsp ground black pepper
Instructions:
Bring a pot of salted water to a boil for the pasta.
In a food processor, combine the artichokes, grated cheese, lemon zest and juice, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
Cook the pasta according to the directions on the packaging. Remember to reserve some of the starchy water for the sauce later. Drain the pasta and return it to the pot.
Pour the artichoke sauce over the pasta and mix well. Add a few tablespoons of pasta water to thin out the sauce and ensure that the pasta is evenly coated.
Serve immediately, topping each serving with additional Parmesan and fresh basil.
