Ingredients:

- 1/3 cup Pilaros Fire Roasted Red Peppers

- 1 tbsp tomato paste

- 1/4 cup roasted almonds

- 2 garlic cloves

- 1/4 cup grated parmesan

- 1/4 cup fresh basil

- 2-4 tbsp Solon Extra Virgin Olive Oil

- 1 tsp Kalas Iodized Sea Salt

- 1 tsp ground black pepper


Instructions:

  1. In a food processor, add the Pilaros Fire Roasted Red Peppers, tomato paste, roasted almonds, garlic, parmesan, fresh basil, Solon Extra Virgin Olive Oil, Kalas Iodized Sea Salt, and ground black pepper.

  2. Process the mixture for about 5 minutes, or until smooth and well-blended. If the consistency is too thick, add an additional tablespoon of olive oil for a silkier texture.

  3. Transfer the pesto into an airtight container for storage.

  4. Enjoy this flavourful pesto with your favourite dishes!


Suggestions for Use:

- As a Pasta Sauce: Cook your pasta as you normally would and reserve 1/2 cup of the pasta water. In a pan, combine a tablespoon of the red pepper pesto with some of the reserved pasta water, stirring until the sauce thickens slightly. Toss in the drained pasta and mix well.
