Mediterranean Magic: Wholesome and Flavourful Flatbread Salad Recipe

To bring this salad to life, you'll need just a few simple ingredients, including:


Ingredients:


- 1/4 cup Pilaros Kalamata Pitted Olives

- 1/4 cup cherry tomatoes, quartered

- 1/4 cup diced cucumbers

- 1/4 cup sliced red onion

- 1/4 cup crumbled feta

- 2 tbsp olive oil

- Half a lemon, juiced

- 1 tsp dried oregano

- Pinch Salt and pepper, to taste

- 1 tsp dijon mustard

- 1/2 tsp maple syrup

- 2 Flatbreads

- 4 tbsp hummus


Instructions:


  1. Mix the olive oil, lemon juice, dijon mustard, maple syrup, dried oregano, salt, and pepper together in a jar or bowl until they're well combined. Set aside.

  2. In a separate bowl, combine the cherry tomatoes, cucumbers, red onions, feta, and Pilaros Kalamata Pitted Olives. Drizzle the dressing over the top of the salad and mix it all together until everything is coated.

  3. Warm up your flatbread in the oven or on the stovetop. Spread a generous amount of hummus on top of each flatbread.

  4. Add a heaping spoonful of the salad mixture on top of the hummus, spreading it out so it covers the entire flatbread.

  5. Drizzle a little bit of olive oil over the top of the salad and add a pinch of salt and pepper to taste.
