Greek-Style Mashed Potatoes: A Mediterranean Twist on Comfort Food

Ingredients:

  • 1 pound Yukon gold potatoes (peeled and cut in chunks)

  • 2 tbsp cream cheese

  • 1/4 cup milk, hot

  • 1/2 tsp black pepper

  • 1/2 tsp Kalas Iodized Sea Salt

  • 1/4 cup red onions, diced

  • 1/2 cup Pilaros kalamata olives, sliced

  • 1/2 cup Pilaros green olives stuffed with garlic

  • 1/2 cup chopped parsley

  • 1/2 cup crumbled feta cheese

  • A drizzle of Solon Extra Virgin Olive Oil


Instructions:

  1. Place peeled and sliced potatoes in a large pot and pour in cold water to cover by 1”. Add a large handful of salt and bring to a boil on the stovetop over high heat. Reduce heat and simmer until potatoes are very tender but not crumbly, 20–30 minutes. Drain, briefly rinse with cool water to remove any excess starch, and return potatoes to a warm pot (off heat) to dry while you heat the milk.

  2. Add boiled and drained potatoes through a ricer into a large bowl. You can use a potato masher if you like chunkier mashed potatoes. Add cream cheese and hot milk to your potatoes. Mix until combined.

  3. To the mashed potatoes, add the kalamata olives, red onions, green olives, feta, chopped parsley, salt, and pepper. Mix until everything is fully incorporated.

  4. Garnish with a drizzle of olive oil.

  5. Enjoy while warm.
