Ingredients:
284 ml Pilaros baked giant beans
1.2 lb Yukon gold potatoes
1 cup chicken stock
1/2 cup Irini extra virgin olive oil
1/3 cup lemon juice
3 garlic cloves, finely grated or crushed
1 tbsp dried oregano
1 tsp ground pepper
2 tsp Kalas iodized sea salt
Instructions:
Preheat your oven to 350°F.
Peel the Yukon gold potatoes and cut them into wedges. Arrange them in a roasting pan and pour in the chicken stock, olive oil, and lemon juice. Add the finely grated garlic, dried oregano, salt, and pepper, then toss everything together until well coated.
Roast for 20 minutes, then turn the potatoes over and continue roasting for another 30 minutes until most of the liquid is absorbed and the potatoes take on a golden hue.
For an extra crispy finish, transfer the potatoes to a separate tray and roast for another 20 to 25 minutes. Flip them over and continue roasting for an additional 20 minutes until beautifully crisp.
While the potatoes are finishing, open the jarred Pilaros baked giant beans and warm them in a pan over medium-low heat until heated through.
Plate the golden, crispy potatoes and top them with the warm, saucy giant beans. Serve immediately and enjoy.
