Peach Dutch Baby Pancake: A Fluffy and Flavourful Delight

Ingredients:

- 6 tbsp butter

- 1/8 cup brown sugar

- 1 cup Diana peaches in light syrup

- 4 eggs

- 2/3 cup milk

- 2/3 cup all-purpose flour

- 2 tsp vanilla extract

- 1 tsp ground cinnamon

- 2 tbsp granulated sugar

- 1/2 tsp Kalas iodized Sea Salt


Instructions:

  1. Preheat your oven to 450 degrees F.

  2. In a 10-12 inch cast iron skillet over medium heat, melt 4 tbsp of butter. Add brown sugar and sliced Diana peaches, stirring occasionally to ensure even caramelization. Let this cook while you prepare the batter.

  3. In a blender, combine eggs, milk, flour, vanilla, granulated sugar, half of the ground cinnamon, salt, and the remaining 2 tbsp of butter. Blend on high for 30 seconds to one minute, or until the batter is smooth and free of lumps.

  4. Once the peaches, sugar, and butter have caramelized, pour the batter into the skillet. Quickly transfer the cast iron skillet to the centre rack of the preheated oven.

  5. Bake for 20-25 minutes, making sure not to open the oven for the first 15 minutes to avoid deflating the pancake.

  6. Remove the Dutch Baby Pancake from the oven. Serve immediately with whipped cream, a sprinkle of cinnamon sugar, or a drizzle of maple syrup.
