Peachy Mini Delights: A Sweet Symphony of Diana Peaches

Welcome to a delectable journey where Diana Sliced Peaches take centre stage, turning a simple muffin into a luscious treat. Picture this: individual peach upside-down cakes, each a golden delight with caramelized sweetness and the unmistakable aroma of cinnamon. Let’s delve into the creation of these Peachy Mini Delights.

Ingredients:

- 1 tbsp butter

- 6 tsp light brown sugar

- 720 ml Diana Sliced Peaches

- 1 1/2 cups all-purpose flour

- 1 tsp baking powder

- 1/2 tsp baking soda

- 2 tsp ground cinnamon

- 1/4 tsp Kalas Iodized sea salt

- 2/3 cup granulated sugar

- 1/3 cup unsalted butter at room temperature

- 1 egg at room temperature

- 1 tsp vanilla extract

- 1/2 cup buttermilk OR 1/2 cup milk + 1/2 tbsp lemon juice (stir and let sit for 5 minutes)


Directions:


  1. Preheat your oven to 350 degrees. If your muffin pan isn't non-stick, ensure to spray it with non-stick cooking spray.

  2. Cut 1 tbsp of butter into 6 equal parts, placing each piece into the large muffin tray. Repeat for a standard 12-cup muffin tray.

  3. Sprinkle 1 teaspoon of brown sugar into each muffin cup.

  4. Slice Diana Sliced Peaches in half, making them thinner, and arrange 5-6 slices into the bottom of each muffin tray. Set aside.

  5. Cube the remaining peaches from the Diana Sliced Peaches jar, making about 1 cup of cubed peaches. Set aside.

  6. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

  7. In a medium bowl, beat butter and sugar together until fluffy and creamy, about 2 minutes.

  8. Add egg and vanilla extract, beating for another 2-3 minutes until the mixture is fluffy and pale.

  9. Alternate adding flour and buttermilk, ensuring that the flour is the last addition. Do not overmix; a light hand keeps the batter fluffy. Fold in the cubed peaches.

  10. Divide the batter into the 6 large muffin cups.

  11. Bake for 25-30 minutes or until a toothpick comes out clean.

  12. Cool the cakes in the pan for 5 minutes, then carefully run a butter knife around the outside to release them.

  13. Place a wire rack over the muffin pan, and carefully turn it upside down to remove the cakes.

  14. Serve these warm mini cakes with a generous scoop of vanilla ice cream for an extra touch of indulgence.
