Ingredients:

- 1 cup Pilaros roasted red pepper (2 tbsp reserved for topping)

- 1 (15-ounce) can chickpeas, drained

- 1 lemon, juiced

- 1/4 cup tahini

- 1 garlic clove

- 2 tbsp Irini extra virgin olive oil (plus extra for serving)

- 1/2 tsp ground cumin

- 1-2 tbsp aquafaba (canned chickpea water)

- 1/2 tsp salt

Instructions:


  1. Begin by summoning the enchanting combination of tahini and lemon juice in a food processor. Let the alchemy unfold as you process the two ingredients for 1 minute, creating a velvety base for our hummus. Scrape down the sides to ensure a smooth and harmonious blend.

  2. Infuse the essence of the Mediterranean with Irini extra virgin olive oil, a garlic clove, ground cumin, and a pinch of salt. Process the ingredients for another 30 seconds, allowing their flavours to intertwine and create a symphony of aromas.

  3. It's time to introduce the chickpeas to the mix. Add half of the drained chickpeas to the food processor and process for 1 minute, ensuring a creamy and luxurious texture. Scrape down the sides to incorporate any lingering morsels, then add the remaining chickpeas and continue processing for 1 to 2 minutes until the hummus reaches a heavenly thickness.

  4. The pièce de résistance: the roasted red peppers. Add them to the food processor and process for another 1 to 2 minutes, marvelling at the mesmerizing transformation as the hummus becomes imbued with the fiery allure of the peppers. If the texture is too thick or if you notice tiny bits of chickpea, gradually add aquafaba, one tablespoon at a time, until the desired consistency is achieved.
