Pizza Muffins: A Savoury Twist on a Classic Favourite

Packed with Pilaros sliced kalamata olives, Diana marinated artichokes, Pilaros fire roasted red peppers, and a touch of pesto, these muffins are bursting with bold, tangy, and savoury flavours.


Ingredients:

  • 12 frozen dinner rolls

  • 1/4 cup Pilaros sliced kalamata olives

  • 1/3 cup Diana marinated artichokes, quartered

  • 1/4 cup Pilaros fire roasted red peppers

  • 1/2 cup Solon extra virgin olive oil

  • 1 garlic clove

  • 1/4 cup red onions, diced

  • 1/4 cup pesto

  • 2-3 tbsp parmesan cheese, grated


Instructions:

  1. Place one frozen dinner roll into each muffin cup of a muffin tin. Cover the muffin tin with plastic wrap and allow the dough to rest at room temperature until it doubles in size, approximately 5-6 hours or as directed on the package instructions. Once the dough has risen, gently press down on each roll to create a slight indentation.

  2. Drizzle each roll with a tablespoon of Solon extra virgin olive oil. Spread a teaspoon of pesto onto the surface of each roll, then top with a mix of red peppers, red onions, kalamata olives, and a few sliced artichokes. Finish with a sprinkle of grated parmesan for a cheesy touch.

  3. Preheat the oven to 350 degrees F. Bake the muffins for 15-20 minutes, or until they are golden brown and fully cooked through. Once baked, let the muffins cool slightly in the tin before transferring them to a serving plate.

  4. Serve these Pizza Muffins warm, and enjoy their delightful mix of Mediterranean-inspired flavours in every bite.
