Savoury Delights: Spinach and Artichoke Puff Pastry Bites

Ingredients:

- 1 box frozen puff pastry, thawed

- 1 large egg, whisked with a splash of water

- 3 cups frozen spinach, thawed and drained

- 4 tbsp Irini Extra Virgin Olive Oil

- 1/2 cup Diana Marinated Artichokes in quarters, chopped

- 12 single quarters Diana Marinated Artichokes, for topping

- 1 small shallot, sliced

- 1/2 cup shredded mozzarella cheese

- 1/4 cup Parmesan cheese

- 1/4 cup cream cheese, at room temperature

- Kalas Iodized Sea Salt, to taste

- Ground black pepper, to taste


Instructions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.

  2. Unfold the puff pastry sheets and slice each into 6 even pieces. Arrange on the prepared baking sheets and then use a paring knife to cut a border into each rectangle. Prick the centres of the pastries with a fork to allow the steam to escape. Brush with egg wash and par-bake for 15 minutes. Remove from oven and set aside.

  3. Set a medium skillet over medium heat. When hot, add olive oil and shallot. Cook, stirring occasionally, until soft and translucent. Add thawed and drained spinach to the pan and cook for an additional few minutes to remove the last of the moisture.

  4. To a medium bowl, add the spinach and shallot mixture, chopped artichokes, shredded mozzarella cheese, shredded Parmesan, and cream cheese. Mix until fully incorporated and season with salt and pepper, tasting to make sure it is to your liking.

  5. Press down the centres of the cooled puff pastry shells. Fill each centre with the spinach-artichoke mixture and top each one with a reserved artichoke quarter. Bake in the oven until golden and bubbly, about 5-10 minutes. Serve warm or at room temperature.
